Coconut Treats

1/8 cup chopped nuts (almonds or pecans are good) (optional)

2 teaspoons unsweetened coconut flakes; 4-5 teaspoons if rolling in coconut flakes

1 tablespoon Virgin coconut oil; melted or softened if hard

1 teaspoon ground flax seeds

1/2 teaspoon pure vanilla extract

1/4 – 1/2 teaspoon Stevia® (sweeten to taste)

1/4 teaspoon almond extract

1/8 teaspoon RealSalt®

Set the chopped nuts and 2-3 teaspoons of the coconut flakes aside, if rolling the coconut balls in the mixture.  Or you may combine all ingredients in a small bowl and mix well.  Form the mixture into a shape similar to a flattened macaroon and freeze.  The ingredients freeze in about 5 minutes.  The coconut treat will pop right out of the bowl and you can eat it like a cookie.  Or you can divide the ingredients into two or three small balls.  Mix together the chopped nuts and remaining coconut flakes on a flat plate and roll the balls in the mixture; freeze for at least 5 minutes.

Pumpkin Angel Dessert

  • 1 large can pumpkin
  • 1 13 oz can evaporated milk
  • 4 eggs
  • 1 C. sugar
  • 3 tsp. pumpkin pie spice
  • 1 tsp. salt
  • 1 box yellow cake mix (dry)
  • 1 ½ cubes (3/4 C.) butter

Mix all but cake mix & butter together and beat well. Pour into greased 9X13 Pyrex cake pan. Sprinkle cake mix (dry) over mixture. Drizzle 1 ½ cubes melted butter over top. Bake 350° for 25 minutes, then reduce to 325° for 25 more minutes or until knife comes out clean.

Walnut Raisin Cake 

1 1/2 cups brown sugar, packed
1/2 cup liquid butter
2 eggs
1 teaspoon vanilla extract
2 cups unsifted flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon
cinnamon
1/2 cup milk
2 cups finely chopped pared apples
1 cup chopped walnuts
1 cup raisins

1.  Preheat oven to 350 degrees. Grease and flour 13x9x2 inch pan.
2.  In large bowl, combine sugar and butter.  Using wooden spoon, beat in eggs and vanilla.
3.  Sift flour with soda, baking powder, and cinnamon.  Stir into egg mixture, alternately with milk.  Stir in apples, chopped nuts, and raisins.
4.  Turn into prepared pan.  Bake 40 to 45 minutes, until surface springs back when gently pressed with fingertip. 
5.  Let cool in pan on wire rack.  Frost, if desired.  Cut into 20 squares.  Top each with walnut.  Makes 20 servings.

I substitute milk, flour, eggs, butter, and use 1/2 sugar called for. I add a tiny bit of Stevia™ to taste.

Lemon-Oat Streusel Squares
16 servings

Crust & Streusel
¾ Cup butter, softened
1¼ cup packed brown sugar
2 Cups all purpose flour
1½ cups rolled oats

Filling
1 can (14 oz) sweetened condensed milk
2 tsp. grated lemon peel
½ cup lemon juice, powdered sugar
(optional)

For crust, beat butter and sugar in large bowl until well blended. In another bowl combine flour and oats. Add to butter mixture for streusel topping; press remaining oat mixture into greased 9" baking pan.

Set aside. and make filling by combining all ingredients except powdered sugar; blend.

Pour filling over crust; sprinkle with reserved oat mixture. Press lightly into filling.

Bake 350º for 30-35 minutes until golden brown.

Cool. Cut in squares.

Sprinkle with powdered sugar just before serving.

Easy Cocoa Mousse
Serves 6

1 envelope unflavored gelatin
1¼ cups skim milk
¼ cup water
1/3 cup sugar
¼ cup baking cocoa
1 tsp. vanilla
1¾ cups whipped topping

Sprinkle gelatin over water in saucepan; let stand 5 minutes. Cook over low heat until gelatin is dissolved.
Combine milk, sugar, cocoa and vanilla in blender. Slowly add gelatin mixture. Fold in 1-1/2 cups whipped topping. Spoon into serving dishes. Cover and chill 1 hour. Garnish with topping.

Basic Impossible Pie
Flair in the Kitchen (Aglow Cook Book)

4 eggs
¾ Cup sugar
½ Cup biscuit mix
1½ tsp. vanilla
½ Cup soft oleo
2 Cups milk

Mix 3 minutes. Pour into 9" pie pan & sprinkle with nutmeg. Bake until knife comes
clean. Cover after 30 minutes if too brown.

350º for 45 minutes

Variations: Sprinkle 1 Cup coconut on top

Quick Coconut Cream Pie

1 pkg. instant pudding mix 5 oz.
1½ cups cold milk
8 oz. frozen whipped topping
3/4 -1 cup coconut flaked, toasted
1 baked pastry shell or graham cracker crust

Beat pudding and milk for 2 minutes. Fold half whipped topping and half the coconut.
Pour into crust and top with remaining topping and coconut. Chill

Fresh Strawberry
Serves 8

9" pie crust
1 quart strawberries or more
1/3 cup sugar
2 Tbsp. cornstarch
1 cup strawberry liquid


Wash, drain well. Hull berries. Fill crust with one layer of firm ripe berries with small end up. Cook remainder of berries with minimum of water. Put through a sieve to get a clear liquid and discard the pulp. Add water if necessary, to get 1 cup of liquid. (Less water needed the better the flavor.)
Blend sugar and cornstarch and add to the liquid. Cook until thick. Cool. Pour over pie. Use a topping of whipped cream.

Yogurt Pie
Sally Anderson 1978 Swedesburg, Ia  Serves 6

Graham cracker crust unbaked
2 containers yogurt (1 pt.)
8 oz or 1 Cup whipped cream
honey for sweetener

Peach, strawberries, blueberries, bananas

Pink Grapefruit Ice Dessert
(Serves 6)
 
Grate 1 Tablespoon pink grapefruit peel (use only the yellow, avoiding the white part of the skin) and mix with 1 cup sugar & 1 cup of water. Cover and chill at least 4 hours or overnight. Stir to blend
and pour through a fine wire strainer;discard peel. Add to this syrup

cups freshly squeezed pink grapefruit juice. Tint it pale pink, if
desired, with a few drops of red food coloring. Pour mixture into a
shallow metal pan; freeze at 0? or colder until solid.

Remove from freezer and let stand until you can break it into
chunks with a wooden spoon; pour into a large mixing bowl and continue
to mash 'til pieces are very small. Best slowly with mixer on low. Then
gradually turn mixer to high and beat until ice is slushy, smooth, and
thick, like heavy cake batter. Wrap and freeze. To serve, let soften
to room temperature for about 5 minutes. Scoop into dessert bowls, and
serve.

 

  Would appreciate any other recipes using grapefruit that someone might have.
